kimchi sundubu
this is my comfort meal. it's super easy, just throwing stuff in a pot. make sure you have rice!
- 1 cup kimchi (i like cabbage but others will work also)
- 1 onion
- a few cloves garlic
- soft silken tofu (ideally korean/asian brand)
- soup seasonings (i add all of these, but add what appeals to you)
- soy sauce + salt
- dashi
- 3-5 dried anchovies, heads cut off and guts taken out
- a spoonful gochujang
- a spoonful soybean paste
- sesame oil
- gochugaru
- other items to put in the stew, depending on what's in the fridge
- mandu
- tteok
- egg
- chicken
- broccoli
- noodles
chop the onion. put some oil in the pot and put the onion and kimchi in there. chop the garlic while they cook for a couple minutes (until the onions get clear and fragrant). put the garlic in there and stir fry until you get bored.
pour ~a bowl and a half of water in the pot, enough to cover the vegetables. if you have things that need to cook for a while, like broccoli, meat, or anything frozen, add that now. bring the water to a boil, stirring occasionally.
now, add your soup seasonings and taste often. adjust to your taste! i usually end up with 1 spoonful each of soybean paste, gochujang, sesame oil, and gochujang, a good splash of dashi, a couple anchovies, and some sesame seeds. let it simmer for a while until you get hungry.
once it's boiling, add your dubu and an egg. boil until the egg is cooked to your liking.
serve with rice and with green onion on top if you wanna be fancy. enjoy :)

a comfort food for bad times
- 1 cup whole milk
- 1 cup AP flour
- 2 large eggs
- 6 tablespoons water
- 3 tablespoons melted butter (+ more for pan)
- ½ teaspoon salt
- blend all ingredients in a food processor or blender until smooth. it says to refrigerate for 2 hrs but i’m impatient so i never do that and they turn out fine
- heat a (nonstick) skillet over medium heat, add butter to coat the bottom of the pan
- pour batter onto the pan and swirl it around so its ~evenly distributed
- cook until spotty golden brown ~30-60 seconds. flip like pancake and cook for another 30 secs
- transfer to a plate. stack crepes on top of each other.
once you have your stack, you can put cheese/meat/fruit/nutella onto it, fold it up, and then put it back on the skillet to melt the cheese/reheat. personal favorites are spam + cheese, and banana/strawberry + nutella. but mix and match to your heart's content.
if your first few crepes come out kinda shitty and broken give yourself a little snack as a treat. i promise i won't tell ;)

i'm gonna be so real i always kind of eyeball this recipe. this feeds one person ish
- 1 cup whole milk
- 1 tablespoon cocoa powder
- 1/2 cup chocolate (a couple handfuls, measure with ur heart)
- chocolate chips, chocolate bar, i've used hersheys kisses in a pinch
- 6 tablespoons water
- 1 teaspoon vanilla (a splash. to taste)
- ½ teaspoon salt
- put water in a saucepan over medium heat
- add cocoa powder and whisk until combined and the water is boiling
- add milk to the saucepan, turn the heat down a little if necessary
- add chocolate chips. whisk vigorously around the sides of the pot so it doesn't burn and stick to the sides
- once combined, give it a taste. feel free to add more chocolate or cook longer if you like it thicker
- if you're satisfied, take it off the heat and stir in the vanilla and the salt
